DIY Chawanmushi

My birthday was terrible, let's not talk about it cause I actually cried 3 times that day.
sigh.

so anyway I was in the mood for eggs today and my mum and i experimented with making our own Chawanmushi.

In case you don't know what it is, this is how a typical chawanmushi (japanese steam egg) looks like!
it's soft, super smooth like tofu and slightly salty!
when it's eaten fresh it's like a little piece of heaven just melted in your mouth :')

but as all diy things go, needless to say, the first 2 attempts (using one egg each time) were damn fail
but we ate it down anyway hahah (later confirm laosai)

BUT AFTER SOME ADJUSTMENTS, THE THIRD TIME WAS AWESOMEEEEE!
the texture is exactly the same as those sold outside at restaurants~~~~
I WANNA FLY ALR EHEHEHE!!!!

cause i personally LOVE chawanmushi and whenever i go to sushi restaurants i have to order it!
but i always order only like a cup cause it's $3.90 each usually, and i'm too cheapskate to buy 3 of it (i could've easily eaten 3 cups man!)

anyway,
the first few times were bad and the top turned out all bubbly and rough and gross. like our typical chinese steamed egg.
i think most people who try to cook their own chawanmushi face the same mistakes.
i'll tell you what it is below!



BUT HENG IN THE END WE FINALLY MADE IT AS SOFT AS EGG TOFU.
SIBEH GOOD~~~~
so i'm gonna teach you guys how i did it! ^^

i'm using these tart cups cause i don't have those nice tea cups the sushi restaurants use and i'm kinda lazy to wash them anyway



and of course you'll need eggs!



as for the ingredients inside the chawanmushi,

i used swiss brown mushroom (IT FLOATS ON TOP OF THE EGG NATURALLY, just like the mushrooms used in restaurants!!! i was damn amused by this LOL)



slice it as thinly as possible!

you have to defrost it, peel off the shell and cut it into the size you want it to be (your chawanmushi, you decide!!! ^^)


as for the flavoring of the egg, we used chicken stock (you can prepare this on your own or get those ready made ones)
be sure to add water to the chicken stock otherwise it's totally not drinkable!!! too salty later all your hair drop :s

if you're confused by what i just typed, prepare your normal chicken soup (MUST TASTE NICE!)


Directions:

#1: Beat 2 eggs in a big bowl
#2: FILTER the chicken soup so it's clear without any residues
#3: Mix in an equal volume of COOLED DOWN chicken soup into the eggs. This is to prevent your eggs from being cooked in the mixing bowl. Mix.
#4: In each tart cup, add in your prawns and mushroom slices.
#5: Pour in the egg mixture in the tart cup. The mushroom slices will float (yay!!!) while the prawns remain at the bottom.
#6: Remove any air bubbles at the surface of the eggs.

Your eggs should look like this before cooking:



#7: Boil water in a pot to prepare to steam the eggs.

***OKAY SO HERE COMES THE VERY IMPORTANT PART****

#8: After the water boils, Lower the heat temperature of the stove!!!
You have to steam the eggs at a low temperature for about 20 minutes. This will prevent any bubbles or rough surfaces from appearing on the eggs.
cause when the water content in your eggs are allowed to boil vigorously, at the same time your eggs get cooked, the bubbly surface appears.
SO PLEASEEEE DO NOT STEAM YOUR EGGS AT TOO HIGH A TEMPERATURE!!

And once you're done with all those.... tadah!
Eat-all-you-can DIY chawanmushi!
and it tastes very much like the real deal!!! I'M GONNA DO THIS MORE OFTEN EHEHEH
you can add in your own fish cake, crab sticks, gingko nuts and such to your own preference ^^
see how the top is damn smooth? ^^ so is the insides!!!!

cheer up dear!!i'm sure your birthday couldnt have been as bad as mine.my grandmother passed away 2 days before my birthday so on my birthday i had to attend her funeral. ): i'm sure that if you keep your spirits up,somehow your not-so-wonderful birthday would be compensated with something even better!! (:

Hey! :) I think you're supposed to cover the chawanmushi tightly with cling wrap to prevent the bubbling and make sure it's smooth!

Hi Rachell!!! Sorry to trouble you but you're the only person i thought i could consult.

I recently joined this preorder and transferred money to the blogshop seller ($32 T_T). However, she did not get back to me after emailing me to attach my transaction receipt which i alrdy did.
